Not Your Average Pumpkin!

I'm delighted to be sharing my first recipe for the Fall with you all. I can't contain the excitement seriously Fall is my favorite season for cooking. There are so many great things to make both savory and sweet. 




Last week I said that I hadn't baked in a while and asked you all for some suggestion on recipes to make vegan. My friend Jessy suggest something pumpkin. She also told me she made pumpkin bread and you all know how much I like a simple recipe. So I decide to give some pizzazz to a generic pumpkin bread recipe after seeing the ones from La Boulange bakery that are now at Starbucks. 



This is not just your plain old bread it's a pumpkin bread topped with a slightly sweet cream cheese mix. You get both the savory and the sweet from the fall spices and cream cheese. As I mixed this recipe together it was as if Fall descending upon my tiny apartment. Seriously the cinnamon, nutmeg, and ginger made their way into our hallway. When my husband walked in he asked if I was baking and I told him I had finished hours ago, that's how intense the fragrance and flavors are in this pumpkin loaf.

Pumpkin Cheese Bread

INGREDIENTS
Cream Cheese Topping Mix:
8 oz cream cheese
1 egg
1/4 cup confectioners sugar
1/2 tsp vanilla extract

Pumpkin Bread Mix:
1 1/4 cups Flour
3/4 cup brown sugar slightly packed
3/4 cup fresh or canned pumpkin puree
2 Eggs*
2 tbsp oil
1/4 tsp salt
3/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves
1 tsp pure vanilla extract
1 1/4 tsp baking powder
1/4 teaspoon baking soda

DIRECTIONS
Set out your ingredients and allow the refrigerated ones to come to room temperature. This is especially important for the cream cheese and eggs (if you are using real ones).

Allow your oven to preheat to 350F while you grease your 9X5 loaf pan. To grease my pans I used spray coconut oil.

Start with your pumpkin bread. Whisk together brown sugar and egg until light and airy. Afterwards stir in pumpkin, oil and vanilla extract. In a separate bowl sift together your dry ingredients which includes the flour and spices. 

Combine dry into wet ingredients adding one cup at a time. Stir until combined but do not over mix as this will results in a rubbery bread.

Your cream cheese should be nice and soft once at room temperature. Combine the cream cheese, egg, vanilla and sugar and mix until creamy.

Pour the pumpkin mixture into your prepared pan and top with the cream cheese mix. 

Allow bread to bake for 40 minutes and then bake for an additional 25 minutes at 325F degrees.

Check bread by sticking a knife in the center and making sure it comes out clean. When bread is thoroughly cooked allow it to cool in the pan for 10 minutes and then move bread out of pan onto a cooling wrack.

Serve with beverage of your choice. Enjoy!
*All ingredients used in this recipe are vegan. Eggs are made from egg re-placer  Butter is Earth Balance, and Cream Cheese is Tofutti.

  1. Oh this just sounds so interesting and so not what I guessed haha! How yum!! We never really eat a lot of pumpkin type sweets in Australia though I've tried pumpkin pie before and it is actually really delicious so I can guess I would love this.

    I think I look forward to umm eating haha! We are in Spring now so remembering to autumn (and yes love Fall!) would be tasty casseroles and lots of potato as it gets warmer...must be the English blood in me :D

  9. You know I should have stuck to my initial thought of pumpkin bread! This looks so good. Funny thing is, I've had the ingredients for pumpkin bread sitting on my counter but haven't had time to actually make it. Your recipe sounds like the way to go!
