Peanut Butter and Jelly?

Sorry there is no jelly here only this really simple peanut butter cookie recipe - I suppose if you'd like to you could add a bit of jelly between two of these cookies. That sounds like it would be a unique cookie combination, but it's definitely something I was not bold enough to try.


I originally got the idea to try making peanut butter cookies from my mom. We both are clean eating so as a reward for when we finished I wanted to send her a few baked goods. So I asked what her favorite cookie was and she told me peanut butter cookies. Having never made them I looked high and low for a vegan recipe. I found a simple recipe to tweak, and then after working with it I realized that there are two types of peanut butter cookies. There is a crunchy one and then there is a chewy one. This recipe is the crunchy one. I actually prefer my cookies crunchy so that I can dip them into cold milk but after trying this cookie I think the peanut butter flavor is better served in a chewy cookie. But that's totally my opinion!


Even though these cookies weren't what I was hoping for they were a welcomed surprise. Once I realized the cookies came out crunchy I decided to use them to make a few peanut butter cookie sandwiches. I did this by spreading fresh peanut butter between the center of two cookies. When my husband came home from work he had a cookie sandwich before dinner and told me that there were delicious.


They are the most beautiful treat I have every made but these tiny cookies pack a mighty punch. The best thing about this recipe is that is vegan, uses few ingredients, and takes little time to whip up. The peanut flavor is really rich so before you make these cookies make sure you have some type of milk on hand - it's required. If you like crunchy cookies this is definitely the recipe for you. In the recipe you can use either natural crunchy or creamy peanut butter it's totally your choice. I used creamy peanut butter, in hindsight I think bits of peanuts would have made this recipe tastier.

Peanut Butter Cookies

INGREDIENTS
1 cup Peanut Butter
1 cup Sugar
1 Egg*
1 tsp Vanilla Extract

*All ingredients used for this recipe are vegan. Egg is Egg Replacer or a flax egg. I typically use whatever I have on hand, both work great in this recipe.

DIRECTIONS
Preheat your oven to 350 degrees before prepping your ingredients. Move cooking racks to the upper third of the oven to insure cookies are cooked evenly.

In a bowl mix the egg, peanut butter, sugar, and vanilla extract until thoroughly combined.

Once mixed spoon 1 TBSP of the mixture on a parchment or silpat mat lined cookie sheet. Make sure the cookies are at least 1.5 inches apart. This recipe should make about 18-20 cookies.

After you have scooped the cookie dough balls onto the sheet flatten them with a fork or your thumb.

Then bake the cookies for 10 minutes or until the edges of the cookies are golden brown. Be sure to watch these cookies for the full ten minutes. I had the best results when I switched position of the cookie sheet 5 minutes into baking while babysitting them to make sure they did not burn.

When the cookies have fully baked place on cooling rack immediately to prevent charring.

Pour a huge glass of milk, eat, and enjoy!

  5. those look fantastic! i love dipping my cookies in milk too, is there really any other way to do it? ;) for the most part i will chose chewy over crunchy, but there are a few crunchy cookies out there that have stolen my heart. :) love that these are vegan!! thanks for sharing, charity!
