BROWNIE LOVE

A few weeks ago I shared a fabulous recipe for Home Made Ice Cream. I paired the ice cream with a yummy brownie. I waited to share the recipe because I wanted to try it several more times first. I have been working on it ever since and it happens to be a favorite around here now. I don't think I have ever known any one to turn down a brownie, not even this vegan one. I am not really a chocolate lover but I do really enjoy these when paired with a glass of almond milk or vanilla ice cream. I don't think it needs to be said that my husband enjoys them, brownies are one of his favorite desserts.


This recipe is really easy to duplicate even for novice bakers. The ingredient line up is pretty simple and hard to mess up. You will see that home made brownies are a lot easier to make than you might have imagined. If you try this recipe I bet you will say goodbye to boxed brownies for good.


Brownies

INGREDIENTS 
1/2 cup butter*
1 cup granulated sugar
2 eggs*
1 tsp vanilla extract
1/2 cup all purpose flour
1/3 cup unsweetened cocoa powder
1/4 tsp kosher salt
1/4 tsp baking powder

DIRECTIONS
Preheat oven to 350 degrees. In a  medium saucepan melt the butter. Once butter is melted remove from heat and stir in sugar, egg replacer, and vanilla extract. Sift together flour, cocoa powder, salt, and baking powder. With a mixer beat into butter and egg mixture. Once smooth spread batter into greased pan.

Bake for 25-30 minute.

Cool. Eat. Enjoy.

*All ingredients used for this recipe are vegan. Vegan butter is Earth Balance butter and Egg is Egg Replacer a flax egg. I typically use whatever I have on hand, both work great in this recipe.




We like our brownies softer so I usually bake for less time. Depending on my mood I also like to jazz these brownies up by throwing 1/3 cup of semi sweet chocolate chips or 1/3 cup of pecans/walnuts into the batter before baking.
