Carrot Cake

So your family refuses to eat their veggies? Well I have a spectacular recipe for those left over carrots - a Carrot Cake. Check out this simple recipe below. This works with both vegan and non vegan ingredients. 

Carrot Cake

Ingredients

For Cake
2 Cups Sugar
1 Cup Oil 
4 whole Eggs
2 Cups All-Purpose Flour
1/2 Teaspoon of Salt
1 Teaspoon Baking Soda
1 Teaspoon of Baking Powder
1 Teaspoon of Ground Cinnamon
2 cups of Grated Carrots

For Icing
1 Stick of Butter
1 8oz Package of Cream Cheese
1 Pound of Powdered Sugar
2 Teaspoons of Vanilla Extract
1 Cup of chopped Pecans

Cake:
Preheat oven to 350F



Mix together the sugar, oil and eggs in a large bowl. 
In another bowl sift together flour, salt, baking powder, baking soda and cinnamon. Add to first mixture and combine. 
Then add carrots and mix until they are covered in batter and all ingredients are thoroughly incorporated.
Pour into a greased and floured pan of your choosing and bake at 350 degrees. Cook for  25 minutes for 9X13 pan and for 50 minutes in a bundt, depending on the pan you use.
6. Cool completely.
Icing:
In larger bowl, cream butter and cream cheese. Add sugar and vanilla and blend, then mix in the nuts. Spread on cooled carrot cake.

Ice Cake when it has cooled completely so Icing does not melt.
