Banana Nut Bread

In a recent trip to Whole Foods I realized that we had possibly purchased too many bananas. I actually don't like bananas very much but I eat them in my smoothie where the taste is hidden. My husband on the other hand loves bananas but for some reason he was not eating them as quickly. So I searched the web for ways to use up bananas. I found recipes for banana ice cream, banana milk shakes, banana pancakes, and finally I found banana bread. I knew that this would like be a hit so I called my husband to ask if he liked banana bread good enough to eat a whole loaf. He said yes so I proceeded to adapt this recipe for his liking.

I also was seeking to put my own spin on a recipe to make it healthier and more so to use what we have in the house. So I made several changes to the ingredients and I added walnuts. It's not vegan but it can be.

Banana Nut Bread


3 Riped Bananas
1/3 Cup of Butter Melted
3/4 Cup of Sugar
1 1/2 Cup of Flour
1/2 Cup of Chopped Walnuts
1 Beaten Egg
1 Tsp of Baking Soda
1/2 Tsp Salt


Preheat your oven to 350 degrees.

Peel and mash the ripened bananas in a bowl. Add in melted butter, sugar and the beaten egg. 

Also add in your walnuts Stir batter well.

Sift in your flour, baking soda and salt. Mix in well do not over stir.

Oil and Flour a loaf pan, you can also line the pan with parchment paper to avoid more sticking.

Fill greased pan with batter and bake for one hour. I would advise to bake in 30 minute increments checking on the bread periodically.

Cool. Eat. Enjoy.

  3. I love banana bread and banana nut bread. I used to also bake it in muffin pans so I could have something quick to grab for work. Yum yum. :-)
