Vegan Chili

Most people would agree that Chili is seasonal recipe specifically for Fall/Winter, but I usually don't go with the majority - so I disagree. Besides that we have still been having Fall like weather here in the city so a pot of Chili was in order. I have also loved Chili since I was a little kid. My mom makes the best chili ever but when I wasn't around her and I got a craving for Chili I'd go to Wendy's. I know bad idea and totally yucky for you, but that's when I didn't know any better. 

Since becoming a vegan I have tried to recreate many of my favorite recipes in vegan form. I still do cook meat for Mr.FixIt just about every day. But here is a vegan dish that he happens to enjoy just as much as I do, I hope you too will enjoy this meatless dish.

Vegan Chili

Here's What You'll Need:
1.5 lbs of Dry Beans or 3 - 15oz Cans of Beans
(an assortment of Black, Pinto, & Kidney)
1 sweet onion chopped
2lbs of tomatoes chopped
16 oz of seitan chopped
3/4 tsp Celery Salt
1 1/2 tsp. Chili Powder
2 tsp of paprika
2 tsp Oregano
Salt & Pepper to taste
Daiya Vegan Cheese (Optional)

Here's What You'll Do:
Dry Beans: Cook your dry beans in your pressure cooker for the time suggested by your pressure cooker usually 10-15. Be sure to follow your pressure cookers instructions.
Canned Beans: Wash can tops, open and drain half way.

Heat a pot or dutch oven and drizzle with olive oil on medium - high heat. Saute onions for 5 minutes then add tomatoes and seitan. Add all spices and seasonings. 

Add beans and 2 cups of water for dry beans or 1 cup of water for canned beans. Salt and Pepper to taste.

Allow ingredients to simmer for 1 hour on medium low heat.

Top with Vegan Daiya Cheese.
Serve with cornbread, crackers, naan or eat it plain.
