Homemade Veggie Broth

I absolutely hate the fact that when I go to the store for veggie broth their are so many additives. I have been carefully watching my sugar and sodium intake since January - and all though I have always been a label reader I never realized how these food companies sneak sugar into everything. I searched high and low when I was in Florida for a sugar free veggie broth. I usually make my own but I did not have time that day. Eventually I discovered Emeril Lagasse's vegetable broth, it has zero grams of sugar. However where it lacked in sugar it more than made up for in sodium. Yikes! While it was tasty I vowed to never buy it again and to always make my own.



I have an awesome recipe for making your own veggie broth, and if you are careful it should not cost you anything extra to make. Check it out below.
Ingredients

Vegetables of your choice.
*Though I do not recommend asparagus, broccoli, cauliflower, or tomatoes in large quantities unless that's what you are going for. These veggies can be over powering in broth.

Directions

1. I prepare to make my vegetable broth weeks before I need it. I do this by collecting all the unused trimmings and peels from vegetables, you know the parts that you usually throw away. *This is how I save money. For example the ends of carrots, the outer layer of an onion, celery, potato skins, parsley stems, garlic, tomatoes, corn, bell peppers etc. I save them all in a Ziploc bag and place them in the freezer. Every time I cook I put all unused vegetable parts in the freezer until my bag is filled. *You may also use fresh chopped/whole veggies.

2. Once you have a full bag, place the frozen veggies into a pot and cover them with water. The vegetables and water should be at a 1:1 ratio. *You can also cook the veggies in a little olive oil until they have caramelized before adding the water. I usually do either based on time.

3. Season the broth if you would like. I typically only add pepper and save the salt for when I am adding the broth to the entire meal.

4. Let the veggies come to a boil, and then simmer for an hour.

5. Once done drain the veggies, I squeeze them when they are not too hot to release more flavor.

6. Ta Da! You have broth! Freeze it or use immediately in a meal of your choice.

7. Enjoy!
