Vegetable Soup

Vegetable Soup Ingredients: 

  • Onions 
  • Leeks 
  • Celery 
  • Carrots 
  • Parsnip 
  • Turnip 
  • Dill 
  • Parsley 
  • Potato 
  • Olive Oil 
  • Vegetable Broth 
  • Salt/Pepper/complete seasoning 

Directions: Heat butter (I use vegan canola margarine) and 2 tlbs of olive oil. 
Chop 1 Onion, 3 small carrots, 1/3 cup of leeks, 1/2 cup celery. 

Sautée ingredients for 5 minutes. Sprinkle with chopped dill and parsley. 

Then add 1 chopped parsnip and 1 chopped turnip. 

Add 4 cups of vegetable broth and 1 cup of water. Season to taste. Add potato last and cook for 20 minutes. 

*Parsnip and Turnip are an acquired taste you may use other vegetables instead I recommend chayote or butter nut squash."
